How to Make a Spicy Vegetarian Pasta Bolognese

Ingredients
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 red pepper, finely chopped
- 1 yellow pepper, finely chopped
- 1 carrot, finely chopped
- tin of chopped tomatoes
- 170g organic soya mince (soaked and drained thoroughly)
- 1 garlic clove, crushed
- Spices (use these according to taste for mild-medium spice):
- 1 tsp chilli powder
- 1 tsp ground cumin
- 1 tsp paprika
- Herbs (use these according to taste):
- 1/2 tsp oregano
- 1/2 tsp basil
- Salt & black pepper to taste
- 250g uncooked pasta spirals (for a healthier version use rice/corn pasta)
Steps
- Place 2 litres of water in a large pan and begin to boil.
- Heat 1 tbsp of olive oil in a large frying pan and add the chopped onions and pre-soaked soya mince. Cook on a medium heat for 5 minutes.
- Add the spices, vegetables, 200g of chopped tomatoes and garlic to the pan. Cook on low heat for 20 minutes or until the excess water has evaporated.
- Add the uncooked pasta spirals to the pan of boiling water along with 1 tbsp of olive oil. Cook according to packet instructions.
- Add the remaining chopped tomatoes to the soya mixture; stir well and heat gently for 2-3 minutes.
- Once the pasta is cooked, drain it, serve on a plate and top with the desired amount of soya mixture.
Tips
- Okara (soy pulp that remains after preparing soy milk) can be used instead of "pre-soaked soya mince".
