How to Make Vegetarian Lasagna

How to Make Vegetarian Lasagna

Meatless lasagna is so great tasting and so healthy to eat that even those non-vegetarian lasagna lovers will never miss the meat. Add a tossed salad on the side, and you are enjoying one of the most favored of all meatless dishes.

Ingredients

  • 1 pkg lasagna noodles
  • one 24 oz jar tomato pasta sauce or sauce of your choice
  • one 24 oz cottage cheese
  • 3 eggs well beaten
  • one 8 oz pkg sliced mushrooms
  • 2 medium zucchinis, sliced
  • one 12 oz mozzarella shredded cheese
  • 8 oz grated Parmesan cheese
  • olive oil spray or any spray of your choice

Steps

  1. Use separate bowls to prepare the following:
    • Add 3 beaten eggs to the cottage cheese mixed well.
    • Combine mozzarella and Parmesan cheese.
    • Sliced zucchini
    • Fresh spinach washed and cut
    • Sliced mushrooms
    • Mozzarella and Parmesan cheese combined.
  2. Spray the oil onto a 9 x 13 baking pan.
  3. Cook lasagna until soft. Rinse under cold water to remove starch and place on top of the mixture.
  4. Spoon the pasta sauce over the noodles to cover.
  5. Take a large spoon and add the cottage cheese and egg mixture all over the pasta sauce you just added to the lasagna.
  6. Add a second layer of the lasagna noodles and repeat the steps until all the ingredients have been completely added. End with the cheese mixture being the top ingredient.
  7. Bake in a 350 degrees Fahrenheit preheated oven for about 35 to 40 minutes until the cheese has a bubbled up look and a toasty looking but not quite burned top.

Tips

  • Buy the washed and prepackaged spinach to save time in washing. Fresh spinach can be very gritty, and practically has to be washed leaf by leaf to get rid of the sand on each leaf.
  • Lasagna is best served right from the oven, although you can reheat it. Prepare ahead all the ingredients, cover with aluminum foil and place in the refrigerator. When ready to eat, remove, bake, and eat.

An Alternative To Gelatin For Vegetarians Author: Jesus Smay Gelatin serves both nutritional and culinary roles in nonvegetarian diets; however, a lot of vegetarians and all vegans do not consume gelatin in its many forms because it is often created out of boiled pig skins and dissolved veal cartilage and bones. This leaves vegetarians with a gap in cooking functionality when a recipe calls for a gel or thickening agent. It also leaves vegetarians with fewer options if they need a source of gelatin to increase bone and cartilage health. If you are a vegetarian and you are looking for something to replace gelatin, do not despair. Here are some alternative options for you: Use a rice starch alternative. A&B Ingredients recently developed a rice starch alternative to gelatins that mimics the cooking functionality of gelatins closely. Use a soy-based alternative. Soyfoods USA developed NuSoy Gel, a gelatin alternative which was created entirely out of of soy isoflavones a

Healthy Vegan Banana Bread Recipe

Healthy Vegan Banana Bread Recipe Author: Matthew Kaplan Now that the weather is getting to be a bit cooler, I have a strong urge to be busting out my baking supplies and warming up the oven. I mean, who doesn't love the smell of delicious baked goods wafting throughout the house. For me, the quintessential baked good is banana bread. My mother would save loads of overripe bananas in our freezer, waiting to defrost them to make her delicious easy banana bread recipe. Just thinking of her moist banana bread recipe makes me salivate a little bit. However, I have found two main issues with her original recipe: 1) Like most traditional baked goods, it's far from a low-cal option. 2) It's definitely not vegan -friendly. With a few twists, I remade my mother's traditional moist banana bread recipe so that it's not only a healthy banana bread recipe, but a vegan banana bread recipe too! 5 Vegetarian Recipes for Breakfast Author: Danielle Tucker Starting the day off right is essential no matter what kind of food you like to eat.  While many people think of only cereal with milk or bacon and eggs as breakfast foods, those who don't eat animal proteins find those ideas unappealing.  Does that mean you are relegated to salads for breakfast if you are a vegetarian ?  Absolutely not!  Recipes for great breakfasts, whether you eat eggs or not, are easy to make and tasty too. Breakfast Burrito The easiest of recipes, this one can be adapted easily to a vegan palate as well.  Fry up some garlic and onions in a saucepan.  Add some chopped extra firm tofu, chopped tomatoes and peppers, or any other veggie you like.  Fry until the veggies are tender.  Salt and pepper to taste and then splash on some Tabasco sauce if you like it hot.  Wrap the filling in sprouted grain tortillas and top with soy or regular cheese and sour cream.  You can make several of these at one time a
